I don't know that I've ever gotten that worked up over what shape the pepperoni was, but I love a properly browned-but-not-burnt salami versus the part that is still floppy, and the rim of a cupped pepperoni (if it hasn't been pushed into burnt yet -- that can be a real downside IMO) …

Medium-thick works well for the 4 minute bake that he's doing in his single test, but, as you alter the bake time, the dynamics change. Cupping is entirely predicated on a slice of pepperoni baking in a fast, uneven manner.

I hate the grease too. What I do is put the pepperoni on a paper towel lined plate and microwave them on high for 30 seconds. Then take a fresh paper towel and dab all the grease off before putting it on the pizza. Super crispy and very little grease! I’ve had a few brands of pepperoni that will end up a bit charred this way but I don’t mind.

2020年9月22日 · If you can travel to Hamilton there is a place called Venetian meats. They supply cup&char pepperoni to all the best pizza places in the GTA. They have a few different sizes. Definitely worth the trip. You can also pick up their products at Longo’s, pusateris and some fortinos. But not sure if they carry the pepperoni
